INGREDIENTS:

Oil (olive or coconut)

1 large onion

3 large potatoes (peeled and chopped)

4 leeks, sliced

1 ltr vegetable stock

Salt and pepper

Vegan Leek & Potato Soup

A basic soup that everyone loves!

 

Sauté the onions, add the leeks & potatoes and sauté for a few more minutes.

 

Add the stock and simmer until the potatoes are soft,

 

Remove from heat and puree with a hand blender stick adding salt and pepper to taste.
