INGREDIENTS:

Oil to sauté onions

(I use coconut oil)

3 large Sweet Pototoes

6 Medium Carrots

2 cups Lentils

1 400g can coconut milk

1.5 ltrs veggie stock

Chilli powder to taste

Sweet Potato, Carrot and Lentil Soup

A yummy sweet potato treat!

 

Sauté the onions, add the chopped sweet potatoes and carrots and saute a few more minutes, then add the lentils, coconut milk, stock and chilli powder to the strength you prefer - of leave it out if you don't like chillli.

 

Simmer until the potato and carrots are soft and the lentils are fully cooked - you may need to add more stock if the soup is getting too thick.

 

Remove from heat and puree with a hand blender stick.
