Quinoa & Chickpea Spiced Salad

This Salad never lasts long as it's eaten up so fast!

 

In a bowl, mix together the chickpeas, raisins, seeds, mint and herbs with the olive oil, then add the quinoa and stir until its all evenly distributed. It goes well with the Kale & Red Cabbage salad!

INGREDIENTS:

3 cups cooked quinoa

400g can of chickpeas

1/2 cup raisins

1/3 cup sunflower seeds

1/3 cup chopped fresh mint leaves

1 tbsp ground coriander

1 tbsp ground cumin

Splodge of olive oil

Ground pepper & sea salt to taste
