Oil (olive or coconut)

1 large onion

1 large butternut squash

3 tbsp maple syrup

1 apple (skinned and chopped)

1 orange (zested and juiced)

1 tsp Garam Masala

1 ltr vegetable stock

Garam Masala Squash Soup

A yummy squash soup with a hint of India!


Sauté the onions, add the squash, Garam Masala, apple, syrup and sauté for a few more minutes.


Add the orange and zest and the stock and simmer until the squash is soft,


Remove from heat and puree with a hand blender stick.
